Our History

What humbly originated in 2015 as a small-scale side endeavor processing wild game seasonally, Hatch’s Custom Meat Cutting, LLC has evolved over the years, expanding three times, in order to accommodate the area’s need for livestock processing.

In 2019, a new facility was constructed and HCMC expanded the umbrella of our operations from wild game only to include domestic animals. In 2020, Hatch’s Custom Meat Cutting became the only State-inspected facility in Aroostook County in an effort to better serve the growing needs of northern Maine farmers in response to rising demands and meat shortages imposed by the Covid-19 crisis.

Throughout the years, we have adapted, restructured, and acquired new equipment in order to successfully meet these needs, offer new products in response to consumer demand, and maintain strong food and safety standards, all the while striving for a consistent and reliable product.

Our Mission

Here at Hatch’s, our goal is to adequately fulfill the needs of socially disadvantaged farmers and producers in our rural, underserved area, by offering high quality, competitive processing services and products close to home. We work closely with regional producers to obtain animals for resale for consumers in search of locally raised meats, enriching the connection communities have with fresh, farm-to-table products, while promoting sustainability and strengthening the area’s food chain resilience.
